Whole30: Day Twelve

You’ll never guess what I had for breakfast!

Still my favorite breakfast in the morning

Ok, maybe you will, but this is still my favorite Whole30 way to start my day. It’s easy on my stomach and keeps me full all morning long. Plus, it’s a no-brainer when it comes to cooking, which is important when dealing with thinking clearly before you’ve had your coffee. Just scrambled eggs and slice an avocado 🙂

So we’re gearing up to spend four days at my in-laws house while our landlord works on our house, so I spent part of the morning planning for how we can stay on track while we are gone. I figured the least amount of stuff that needs to be refrigerated the better, and stuff I can throw in her crock pot or is easily adaptable to being kid friendly would be best.

Here’s what I decided on:

Dinners

Burgers w/ Carrot Fries  (The kids can have theirs on a bun, while Nate and I have them on romaine)

Pioneer Woman’s Perfect Pot Roast w/ Roasted Green Beans (I plan on putting this in the crock pot instead of the oven on low for 8 hours)

Skinnytaste.com Crock Pot Cacciatore w/ Sauteed Zucchini  (The kids devoured this last time and it’s easy to prep beforehand)

Breakfasts

PaleoOMG’s Breakfast-on-the-go’s Egg Muffins (I found compliant sausage I plan on using, and thought these would be easy to make ahead and keep in the fridge and heat up in the morning. The recipe makes enough for us three mornings worth)

The kid’s will likely have cereal, banana, and milk x3

Lunches

Grilled Chicken Salad w/ Mandarin Oranges, Slivered Almonds, and Apple Cider Vinaigrette x 3

Kid’s will have mac and cheese w/ fruit x 3

Snacks

Larabars

Bananas

Seasnacks

Epic Bars

I found the motherload of snacks at Drug Emporium. I scoured the whole store, and I picked up dozens of items thinking they would be OK, but I put back 95% of all them. They either had vegetable oils or sugar in almost everything! No wonder people oppose eating this way, it’s a lot of work! But here’s our stash of snacks.

Larabars, Epic Bars, Seasnax…Oh my!

We finally found chicken broth that’s just chicken broth! Imagine that! Well, the brand is called Imagine. So I guess so 😛

I plan on prepping or completely cooking as much as I can beforehand, so I won’t be dirtying up their kitchen three times a day.

Well, back to day twelve. Lunch was my leftover Shepherd’s Pie. Don’t worry, I picked the peas out!

Overall, I have felt really awesome. My sleep quality has improved remarkably, considering I still wake up a few times a night to nurse Sweet Pea. My dreams are as vivid as they were when I was pregnant! It’s really neat. My clothes are fitting more loosely. My energy levels have slowly improved. I feel clear headed and my mood feels stable. I’d say so far so good!

Dinner was FABULOUS. I truly mean that. It made me do a little happy dance! Just look at it!

“Spaghetti”

A massive, heaping plate of SPAGHETTI! It’s yet another Skinnytaste recipe. I’m just such a fan of Gina and all her recipes. She provides wonderful tasting recipes that are healthy and chock full of produce! I’ve made dozens of her recipes and the only ones I haven’t cared for are the desserts. Every single savory dish of hers has been a huge hit at our house! So please go check out her site and send her some love.

The kids loved this dinner too. I still made them regular ole noodles cause I’m not ready for the fight that comes with taking away their beloved pasta 😉

Well, that wraps up Day 12. This weekend will be a busy one. So much laundry, cleaning, packing, shopping, prepping food! Wish me luck!
